Snickety Lemon Fish
1 lb of salmon fillet in 4 pieces
1 TBSP butter
1 TBSP extra virgin oil
1 tsp greek seasoning
1 TBSP lemon pepper
dash each of salt and pepper
2 fresh lemons or 1/2 bottled lemon juice (fresh is better)
melt butter, olive oil, and seasonings together
place foil in the bottom of a shallow baking pan and place fillets in pan
cut 4 slices from one of the lemons and place 1 slice on each fillet then squeeze remaining juice from both lemons all over the fish
pour butter, oil and seasonings over the fish and
bake at 450 for 15 minutes or until fish is flaky
serve with long grain and wild rice.
Can feed 4 but we ate it all in one sitting!
